At Skarregaard at Kolding Fjord I produce organic, green sprouts. I have a tremendous knowledge of wild flowers and herbs - a knowledge I have acquired since I, as a small child, helped myself in the family colony garden.
At my organic estate, Skarregaard, I grow dried and edible herbs and flowers, which give a great taste and magic to the food! The range is wide with, for example, parsley, nettles, several varieties of mint, lavender, cornflowers and marigolds. Some ingredients I find wild, such as onions and woods, while most herbs are grown on the farm.
The farm also grows various vegetables in smaller quantities. Both vegetables and herbs are grown together in high beds with gravel, which is a method from the Swedish gardener, Nils Åkerstedt. The fertilizer is 100 per cent. natural and organic, consisting of clippings from my own pasture. From the grass laid over the gravel, the plants get all the power and nourishment they need, while also providing the grass with a constant, ideal moisture for the plants.
The herbs are also sold as teas, where I have been successful in specializing herbal teas for various restaurants, local as well as national. Among other things, the two-star Michelin restaurant, Geranium, has been enthralled by the herbal tea, and they serve it to its guests. For several years I have had a collaboration with Geranium, where I mix the herbs together for delicious and exciting herbal teas. In addition, I also supply herbs for several eateries, such as. Tree Top in Vejle at the head of kitchen, Rasmus Munk and to Sdr. Bjert Kro at head of kitchen, Rasmus Vemmelund.
